The cheapest, Easiest Apple Cake Recipe
  1. Peel and dice 3 apples.

  2. Heat 1 tbsp of oil or butter in a pan and fry the diced apples until they're tender and golden.

  3. Stir in 1 tbsp of sugar with the apples and cook until the sugar melts and caramelises. Set aside to cool.

  4. In a large bowl, whisk together 1 cup of oil, 1 cup of yogurt (or milk/sour cream), 1 cup of sugar, 2 eggs, and 1 tsp vanilla (if using) until smooth and well combined.

  5. Fold in 2 cups of self-raising flour (or 2 cups plain flour + 1 ½ tsp baking powder) and a pinch of salt, stirring gently until just combined. You can also add 1 tsp cinnamon if you have it!

  6. Gently fold through the cooled caramelised apples into the batter.

  7. Pour the mixture into a greased cake tin and bake at 180°C fan (200°C conventional) for 45-50 minutes, or until a skewer inserted into the middle comes out clean.

  8. Let the cake cool completely.

  9. For a glaze, whisk 1 cup icing sugar with a splash of water and 1 tsp vanilla. Drizzle over the cooled cake.

  10. Enjoy the cake plain or warm with a scoop of ice cream!
