Add 1 lb fresh cranberries to a food processor
Add ½ cup tart cherry juice (or pomegranate juice)
Add a pinch of salt
Add 3 sprigs of fresh mint
Add ¼ cup maple syrup
Add juice of 2 lemons
Add ½ teaspoon Tajin
Add 2 tablespoons jam (sour cherry or raspberry)
Add fresh grated nutmeg (about ⅛ teaspoon)
Add ½ teaspoon dried sumac
Add another pinch of salt and additional nutmeg to taste
Add 1 additional tablespoon maple syrup if desired
Pulse in food processor until desired consistency is reached
Transfer to an airtight container
Store in refrigerator overnight to allow flavors to develop and color to deepen
Before serving, drizzle with olive oil and top with fresh grated nutmeg
