Crab Cake Benedict
  1. Gently pick through crab meat for shells.

  2. Mix mayo, mustard, Old Bay, and egg in large bowl.

  3. Add crab meat and fold carefully.

  4. Add just enough panko to bind.

  5. Form into 4 patties.

  6. Chill 30 minutes.

  7. Melt butter slowly in small pan.

  8. Whisk egg yolks and lemon juice in double boiler.

  9. Whisk constantly over simmering water.

  10. Slowly drizzle in melted butter.

  11. Season with salt and cayenne.

  12. Toast English muffin halves.

  13. Pan-fry crab cakes until golden.

  14. Poach eggs in simmering water with vinegar.

  15. Keep hollandaise warm off heat.

  16. Garnish with fresh chives.

  17. Place crab cake on muffin half.

  18. Top with poached egg.

  19. Spoon hollandaise over everything.
