Honey Roasted Butternut Squash With Cranberries And Feta
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large bowl, toss the butternut squash cubes with olive oil, honey, ground cinnamon, ground nutmeg, salt, and pepper until evenly coated.

  3. Spread the seasoned butternut squash cubes in a single layer on the prepared baking sheet and roast for 25-30 minutes, turning halfway through.

  4. Once the squash is tender and golden brown, remove it from the oven and sprinkle with dried cranberries, crumbled feta cheese, and chopped pecans (if using).

  5. Garnish with fresh thyme leaves and serve warm.
