Nacho Taco Beef Cheesy Sauce Pasta
  1. Start by bringing the pasta to boil in a large pan of salted water. Cook according to packet instructions. Drain and set aside.

  2. Add the beef mince to a large pan and fry for 3-4 minutes until almost browned.

  3. Once the beef is almost browned, add the white onion and pepper. Cook for a few more minutes until soft.

  4. Stir in the chopped garlic for a minute before adding the taco seasoning, tomato puree and chopped tomatoes. Pour in the pasta water and turn the heat down to low to thicken.

  5. Heat a saucepan over medium heat. Add the butter until melted before stirring in the flour to make a roux. Cook for a minute and gradually whisk in the milk until smooth.

  6. Once smooth, season with the smoked paprika and add the cheeses. Stir until smooth.

  7. Add the pasta into the beef and toss to combine.

  8. Serve the pasta before pouring over the cheesy sauce.

  9. Garnish with the fresh coriander and crumble over the tortilla chips.
