Throw all the pudding ingredients into the blender and give it a good whizz.
Pour into a shallow baking pan (about 30 cm in diameter).
Bake in a preheated oven at 175 °C for 20-25 minutes until lightly browned on the edges. It still needs to have a light jiggle. Remember it's a pudding, not a cake.
Let it cool completely.
Refrigerate until you're ready to serve.
To decorate: Mix the dessert cream with the sugar and decorate the pudding with the sweetened cream, chocolate flakes, toasted coconut flakes
