Drop the sugar and yeast into the water and let it sit until it gets foamy, about 10 minutes.
Melt your butter.
Mix the flour, melted butter and yeast mixture together.
Once a rough dough has formed, dump your dough onto a floured surface and knead it into a ball.
Place the ball into a bowl greased with butter. Cover the dough and let it rise in a warm place for an hour.
Bring a large pot of water to a simmer.
Preheat your oven to 400°F. Line two baking sheets with parchment paper.
Punch the dough down and break it up into 8 pieces.
Roll a piece out into a 15-17″ strand and form it into a pretzel. Set aside. Repeat with the remaining 7 pieces.
Once the water comes to a simmer, stir in the baking soda.
Dip the formed pretzels into the baking soda bath, one at a time.
Carefully pull the pretzels out of the bath after just 5 seconds each and place them on your parchment-lined baking sheets.
Before baking them, you can brush them with more melted butter and add salt crystals.
Bake your pretzels at 400°F for 12-15 minutes or until the pretzels are golden brown.
Let them cool for 10 minutes.
