American Cheese
  1. Pour 160ml of cream into the lemon juice baking soda or Alka-Seltzer sodium citrate mixture and stir together completely.

  2. Pour into a medium heat sauce pan. If it starts to bubble, lower the heat. We don't want it boiling hot.

  3. Stir in 300mg shredded sharp cheddar cheese with 100g Monterey Jack cheese one hand full at a time until it's silky and emulsified, add milk if it gets too thick.

  4. Line a half baking sheet with parchment paper and pour the melted cheese onto the parchment paper and using a spatula, push it flat.

  5. Use another piece of parchment paper to pay on top and use another half sheet pan to flatten it out equally.

  6. Place in the fridge for 3 to 4 hours or overnight.

  7. Slice it in to squares.
