Prepare the Guacamole: In a bowl, mash the avocado flesh to your desired consistency. Stir in the finely chopped red onion and fresh cilantro.
Add Lime Juice: Squeeze in the juice of two limes, mixing well. This adds a zesty flavor and helps keep the guacamole from browning.
Season: Add salt to taste, adjusting as necessary.
Make Tortilla Chips: Preheat your oven to 350°F (175°C). Cut the flour tortillas into chip-sized wedges or strips. If desired, lightly spray or brush them with olive oil for extra crispiness.
Bake Tortillas: Spread the tortilla pieces in a single layer on a baking sheet. Bake for about 10 minutes or until they are crispy and lightly golden.
Season Steak: Place cubed steak into a bowl and add in a splash of avocado oil. Season generously with fajita seasoning and squeeze in the juice of ½ a lime. Mix till well combined.
Sear Steak: Get a large skillet going over medium high heat. Spray with avocado oil and sear for 5-7 minutes mixing every minutes until cooked to your liking.
Serve: Add the steaks on top of the fresh guacamole and serve with your homemade crispy tortilla chips.
