Marinate Lamb – Mix all marinade ingredients and coat lamb evenly. Let rest 30 minutes.
Sear Lamb – Heat skillet over medium-high; grill lamb 3–4 minutes per side. Rest 5 minutes.
Cook Noodles – Boil noodles slightly underdone; drain. Stir-fry garlic, onion, and veggies in chili oil. Add sauces and toss noodles.
Fry Egg – Heat chili oil, crack egg, season, and fry until edges crisp.
Assemble – Plate noodles, top with lamb and fried egg. Drizzle extra chili oil and garnish.
