Press and dice the tofu, coat in the seasonings (soy sauce, onion and garlic powder), cornflour and then oil, then bake/air fry until crispy.
Fry the minced garlic and chili flakes until soft and fragrant, then add maple syrup, lime juice, soy sauce and water, then reduce to thicken, add a few tsp corn flour with water if necessary.
Add the steamed broccoli and roasted cashews to the sauce, then serve on top of the quinoa, garnish with sesame seeds and sriracha.
