For spongey, fluffy cakes: replace 1 egg using 1 tsp of baking soda with 1 tablespoon on vinegar. Be sure to add the vinegar at the end before baking so you get the optimum rise! The more bubbles, the more rise!
For vegan batter: replace 1 egg using 1 tbsp chia or flax seeds (or meal) with 3 tbsp of water.

Another great replacement for anything egg wash needed (especially for holiday season) is using ¼ medium sized banana, mash that up and add 2-3 tbsps of water! You'll have the perfect vegan egg wash. You can also use aquafaba!
