Preheat oven to 300
Cook brisket 45min-1 hour for every pound of brisket (ex 4 hours for 4 lbs of brisket)
Salt (kosher) and pepper brisket
Pan sear in a very hot skillet (no oil needed) 3-4 minutes each side starting with fat side down (use largest frying pan possible - CAST IRON BEST)
In a bowl, mix 1 can Modelo beer, 1 cup of brown sugar, 1 jar of chili sauce and 2-3 bay leaves
Slice 1 onion (white or yellow) and layer on bottom on large Le Creuset pot with lid
Put seared brisket on top (fat cap side facing up) of it and then pour liquid mixture over brisket and put into oven
Half way through cooking, add baby white potatoes sliced in half
Thirty (30) minutes before cooking is done, add carrots and prunes
Fifteen (15) minutes before cooking is done, add celery
Remove pot from oven and take out brisket from pot to rest for 30 minutes
While the brisket is resting, reduce sauce if it’s too liquidy
Slice the brisket AGAINST THE GRAIN after it rests and then put the slices back into the pot
Put pot back into 300 oven for 15-20 minutes
Serve immediately
