Begin by peeling and washing the potatoes, then cut them into cubes.
Place the cubed potatoes in a large bowl and toss them with olive oil, salt, pepper, garlic powder, and smoked paprika.
Cook the seasoned potatoes in an air fryer at 400 degrees F for about 20-25 minutes, shaking them a couple of times during cooking.
While the potatoes are cooking, heat a skillet over medium-high heat.
Add the ground beef to the skillet and season it with salt, cayenne, chili powder, cumin, paprika, dried cilantro, and black pepper.
Once the beef is browned, drain any excess grease from the skillet.
Stir in the minced garlic and mix well.
After both the potatoes and ground beef are cooked, combine them in the skillet.
Sprinkle shredded Colby Jack cheese on top and place the skillet in the oven at 400 degrees F for a few minutes to melt the cheese.
Finally, pour warm Queso over the entire skillet and garnish with fresh cilantro and your favorite taco toppings, such as sour cream, taco sauce, and Pico de Gallo. Enjoy!
