Thai Chicken Meatballs
  1. In a large bowl, mix all the meatball ingredients and form into balls.

  2. Heat a large pan over medium heat, add sesame oil and sear the meatballs for 3-4 minutes per side. Remove from pan.

  3. In the same pan, add sesame oil, onion and bell pepper, sauté for 2 minutes.

  4. Add garlic, ginger, peanut butter, coconut milk, sriracha, soy sauce, curry powder, and turmeric powder. Bring to a simmer.

  5. Return meatballs to the pan and let simmer for 10 minutes.

  6. Serve over rice with fresh cilantro and lime juice.
