Preheat oven to 220C/200C fan forced. Line 2 baking trays with baking paper.
Heat oil in a large frying pan over medium-high heat. Add the bacon, onion and garlic, and cook, stirring, for 5 minutes or until onion has softened. Transfer to a large bowl. Set aside to cool slightly.
Add mince, corn, cheese, breadcrumbs, parsley and 1 egg. Season. Use clean hands to mix until well combined.
Cut the pastry sheets in half. Place one-eighth of the mince mixture along centre of each piece of pastry. Brush edges with egg. Fold pastry over to enclose the filling, pressing to seal. Cut each roll into 6 pieces. Place the sausage rolls, seam side down, on the prepared trays. Brush the pastry with egg. Bake for 30 minutes or until cooked and golden..
