Apple pie filling
French toast
Make apple pie filling first by melting butter in a pot then adding apple, spices, sugar, rum (if using) and water. Cook until apples are soft. I like to add a little water to cover the apples. then let simmer on low heat for 20min (or longer depending on how soft I want them). For the most flavor I let them simmer on low for about an hour. In a separate bowl combine 1 tbsp cornstarch and 1 tbsp water and mix until combined. You may need more thickener. Adjust accordingly. However don’t add cornstarch directly to the mixture. Dissolve in water first then add to the mixture. Add to apple mixture and combine until mixture thickens. rMixture should be kinda thick. Set apple filling aside in a bowl and stir in vanilla and let cool.

Mix together eggs, milk, vanilla, and cinnamon/sugar for French toast mixture. Roll out bread until it’s flat. Add apple filling to one end of the bread and carefully roll it up. May need to pinch it to keep it together. Dip in French toast mixture then place seam side down in preheated skillet over low medium heat. Cook on all sides until brown. While cooking add some cinnamon and sugar to a bowl. Roll French toast roll ups in cinnamon sugar after cooking. Dip in caramel. Enjoy.
