Curry Pasta Salad
  1. Cook the pasta according to packet instructions. Don't leave it too al dente as it will require no further cooking. Drain and rinse under cold water. Allow to drain in a colander very well.

  2. In a large bowl, whisk together the yoghurt, mayonnaise, curry powder, mango chutney, vinegar and salt.

  3. Add the prepared sweetcorn, peppers, onions, cucumbers, carrots, coriander and pasta. Stir very well to coat.

  4. Chill the pasta salad in the fridge for 30 minutes before serving.
