COD-STER SALAD
TO SERVE
Preheat oven to 350 degrees. Lay out aluminum foil on a baking sheet with plenty to spare ( it will need to be folded into a packet).
On the aluminum spread out cod filets. Season with Old Bay & garlic cloves. Cut butter into pats & spread out across filets. Top with plenty of fresh lemon juice.
Bake in the oven until fish is opaque & flaky. Once cooked, reserve cooking butter & juices in a medium bowl. Place fish in the fridge to cool for 1 hour.
While fish cools, mix remaining ingredients for Cod-ster rolls with the reserve cooking butter & juices. Don't wait for butter to cool, it will be more difficult to incorporate.
Flake fish into the Cod-ster roll mixture & gently fold in. Return to the fridge & allow to cool completely.
Lightly butter the buns before toasting or grilling
To serve, add chopped lettuce to the bun before topping with the salad mixture.
