Spiced Apricot Glaze Recipe

Makes. 1 cup, enough for an 8 pound ham or two slabs of ribs

Preparation time. 15 minutes

Cooking time. 10 minutes

Keeps. Because it has a high sugar content, it can keep for months in the refrigerator.

  1. Prep. In a medium bowl, combine the glaze ingredients and mix well. Refrigerate until you need it. It will keep for weeks.

  2. Smoke until 125 degrees and tear off about 6 feet of aluminum foil and fold it in half.

  3. Put a layer of glaze on the bottom and place the ham in the center. Fold the sides of the foil to make a bowl and pour the rest of the glaze over the ham and brush it into the nooks and crannys and close foil until the ham is about 140 degrees. Open the foil and use the last 5 degrees to set the glaze.
