Pistachio Cranberry Shortbread Cookie
  1. In a bowl add butter, almond extract, sugar, mix until combined with then add the flour and salt, dried cranberries and pistachios, most likely you're going to have to use your hands.

  2. When the dough starts to feel like a Play-Doh start, rolling it out on the counter into a large log.

  3. Put it in plastic wrap and put it in the freezer or the fridge into it completely hardened up. I would say about 30 minutes to an hour.

  4. Preheat the oven to 375°.

  5. Take the log of cookie cut into it be very careful if it starts to crack just shape it back into a circle shape.

  6. Put it on a tray with a baking sheet like parchment paper . You want it to be at least an ¼ inch thick put it in the oven for 9 tp 11 minutes. You don't want to burn these.

  7. Take them out of the oven and allow them to cool down.

  8. Melt some white chocolate and you can dip half the cookie into them allow that to harden up and then enjoy.
