Remove the chicken from the bone, dice it, and add it back into the rotisserie chicken bag or a large mixing bowl.
Add cucumbers, bell pepper, lettuce, heirloom tomato, scallions, and cilantro on top of the chicken.
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and any optional additions.
Pour the dressing over the salad.
Sprinkle generously with toasted sesame seeds.
Seal the bag (or toss well in the bowl) and mix until everything is evenly coated.
Taste and adjust seasoning as needed.
Serve immediately and enjoy.
