Whole Spices (for 2 cups of chai; cinnamon and cardamom are the important ones!):

  1. Bring to a boil. Once it starts frothing up, remove from heat until it dies down again.

  2. Repeat this 3 times.

  3. Using a ladle, spoon some chai and drop it back into the pot numerous times to get some air into it. You want airy chai, not thick and stodgy chai.

  4. Once you get some nice froth in there, add some turbinado sugar (ideally) and stir until it melts in. Then pour over a strainer and serve!
