Sour cream vanilla cake
  1. Preheat oven to 350°F. Grease your baking dish (sheet pan or 9x13).

  2. In a mixer or large bowl, beat butter and sugar until light and fluffy.

  3. Add eggs one at a time, mixing well after each addition.

  4. Mix in vanilla, milk, and sour cream. (It may look curdled—totally normal.)

  5. Gradually mix in flour, baking powder, and salt. Stir until just combined.

  6. Pour into pan and bake: Sheet pan: 18–25 minutes; 9x13 or rounds: 25–30 minutes.

  7. Bake until a toothpick inserted into the center comes out mostly clean and the edges begin to pull away from the pan. Let the cake cool completely before frosting.

  8. Blend thawed strawberries into a smooth purée.

  9. In a mixer or large bowl, beat butter and salt until fluffy.

  10. Gradually add powdered sugar.

  11. Add vanilla, then slowly mix in strawberry purée: Sheet pan: start with ½ cup, add more if needed; 9x13: start with ¼ cup, add more if needed.

  12. Beat until smooth, fluffy, and spreadable.
