Preheat your oven to 350 degrees.
In a mixing bowl, add 2 cups of oats, ½ cup pepitas, ½ cup dried cranberries, ¼ cup chia seeds, 2 teaspoons of cinnamon, 1 teaspoon of salt, and 2 teaspoons of vanilla.
Add ¼ cup of honey and 1 ½ cups of silk coconut milk, and stir everything together.
Grease an 8 x 11 glass baking dish with coconut oil.
Pour the oatmeal mixture into the greased baking dish and flatten it out with a spoon.
Add dried cranberries and pumpkin seeds to the top sparingly.
Bake in the oven at 350 degrees for 25-30 minutes or longer.
Let it cool before cutting into bars.
Wrap the bars in parchment paper and store in a ziplock bag in the freezer.
To eat, microwave for 1 minute wrapped in parchment paper or a paper towel.
