Pumpkin Seed & Cranberry Oatmeal Breakfast Bars
  1. Preheat your oven to 350 degrees.

  2. In a mixing bowl, add 2 cups of oats, ½ cup pepitas, ½ cup dried cranberries, ¼ cup chia seeds, 2 teaspoons of cinnamon, 1 teaspoon of salt, and 2 teaspoons of vanilla.

  3. Add ¼ cup of honey and 1 ½ cups of silk coconut milk, and stir everything together.

  4. Grease an 8 x 11 glass baking dish with coconut oil.

  5. Pour the oatmeal mixture into the greased baking dish and flatten it out with a spoon.

  6. Add dried cranberries and pumpkin seeds to the top sparingly.

  7. Bake in the oven at 350 degrees for 25-30 minutes or longer.

  8. Let it cool before cutting into bars.

  9. Wrap the bars in parchment paper and store in a ziplock bag in the freezer.

  10. To eat, microwave for 1 minute wrapped in parchment paper or a paper towel.
