  1. Pre-heat oven to 325 degrees.

  2. Rub pork generously with smoked paprika, Cajun spice, ground cumin, BBQ spice, salt, and pepper liberally.

  3. Place pork butt in a roasting pan. Cover with tin foil and place in the oven for approximately 3 hours.

  4. Using your hands or fork pull cooked pork.

  5. Dress the pulled pork with Memphis style BBQ sauce.

  6. In a mixing bowl add ketchup, mayonnaise, and hot sauce.

  7. Whisk together. Season with salt and pepper.

  8. In a pan over medium heat add grapeseed oil and toast the brioche bun.

  9. Dress the bun with Thousand Island dressing. Top the bun with pulled pork.

  10. Top the pulled pork with sliced tomatoes, lettuce, and pickles.

  11. Serve the sandwich with French fries.
