Cover and let rise 3 hours.
With 45 minutes left, preheat oven to 450°F with your Dutch oven inside.
Turn dough onto a well-floured surface and gently shape into a loose ball.
Place dough on parchment paper and score the top.
Sprinkle with flaky salt and pepper if using.
Carefully transfer dough into the hot Dutch oven and cover.
Bake 30 minutes covered.
Remove lid and bake 15 more minutes until deeply golden.
Cool at least 15 minutes before slicing.
