Brown Butter Banana Crumb Cake
  1. Preheat oven to 350°F. Line an 8x8 pan with parchment.

  2. Brown the butter and let cool slightly.

  3. Make streusel by mixing ⅓ cup flour, ¼ cup packed light brown sugar, ½ tsp cinnamon, and 3 tbsp very soft salted butter. Mix until crumbly. Set aside.

  4. Make cinnamon sugar by mixing 3 tbsp packed light brown sugar, 1 tsp cinnamon, and 1 tsp cocoa powder. Mix together. Set aside.

  5. Whisk together flour, baking powder, baking soda, and salt.

  6. In another bowl whisk banana + brown sugar until smooth. Add egg, sour cream, browned butter, and vanilla.

  7. Fold dry ingredients into wet ingredients.

  8. Spread ⅔ batter into pan.

  9. Sprinkle cinnamon sugar evenly over batter.

  10. Dollop and spread remaining batter on top.

  11. Top with streusel.

  12. Bake 35–40 min, until toothpick comes out clean.

  13. While baking, make the glaze by mixing whisk ½ cup icing sugar, 1 tbsp milk, and ¼ tsp cinnamon. Whisk until smooth.

  14. Cool, drizzle with glaze, serve.
