In a small bowl of jar, mix together the salt, garlic powder, smoked paprika, dried thyme, dried oregano, black pepper, and cayenne pepper.
Use a paper towel to pat the pork chops dry. Season both sides with the seasoning mixture, about ½ tablespoon per pork chop.
Heat the olive oil in a large cast iron skillet over medium-high heat, until shimmering. Add the pork chops in a single layer. Sear for 3-5 minutes per side, without moving except to flip, until the internal temperature reaches 140-143 degrees F (60 degrees C).
Transfer the pan seared pork chops to a plate. Rest for 5 minutes before serving (internal temperature should rise to 145 degrees F (63 degrees C) during resting).
