Combine water and yeast into a bowl and lightly mix. Allow to sit for a couple minutes for yeast to activate.
Add flour and salt. Mix with stand mixer, using the dough hook attachment (or by hand if ur not lazy) and mix until fully combined. Allow to rest for 30 minutes.
After rest, knead until smooth. Transfer to a lightly greased bowl and allow to rise for ~2 hours.
Divide into as many pieces as you want baguettes. 3 pieces for ~15 inch baguettes. You can do 4 or 5 pieces and make Demi baguettes as well.
Fold one side of the dough up ⅔ of the way, then rotate and repeat, sealing with the palm of ur hand.
Roll out a few inches longer than you would like. (~18 inches) because they will shrink a bit on the counter and in the oven.
Place on to parchment lined baking sheet and cover. Let rise for 45 mins.
Preheat oven to 450 with a baking tray on the lower rack.
Using a razor blade (or sharp knife) score the bread horizontally 3 times per baguette.
Place baguettes into oven on top rack. Pour boiling water onto bottom rack into the sheet pan and close the oven quickly to trap steam.
Bake for 20ish minutes, then remove from sheet pan and finish on the rack. You want a DEEP brown color, almost burnt.
Bonus points if you turn off the oven when almost done baking and crack it, allowing the baguettes to cool slowly, inside of the oven.
Marvel at the fact that you just made baguettes and eat in one sitting.
