Combine elderberries, astragalus root, ginger, cinnamon sticks, cloves, and water in a saucepan.
Bring to a boil, then reduce to a simmer.
Cover and simmer for about 30-40 minutes, until the liquid reduces by half.
Remove from heat and stir in lemon balm.
Cover and steep for 10-15 minutes.
Strain the mixture through a fine mesh strainer or cheesecloth, pressing the herbs to extract all the liquid.
Once the liquid cools to lukewarm, stir in raw honey until fully dissolved.
Pour into clean jars or bottles.
Store in the fridge for up to 3 months.
