Slice the persimmons very thinly using a mandolin
Whisk together yogurt, eggs, oil, vanilla, flour, cinnamon and baking powder
Fold in all the sliced persimmons
Pour into a lined loaf tin
Bake at 180°C (350°F) for approximately 45 minutes until set
Cool for 10 minutes before slicing
Cover tin with foil if the top starts to brown too quickly
