Low-calorie Persimmon Loaf Cake
  1. Slice the persimmons very thinly using a mandolin

  2. Whisk together yogurt, eggs, oil, vanilla, flour, cinnamon and baking powder

  3. Fold in all the sliced persimmons

  4. Pour into a lined loaf tin

  5. Bake at 180°C (350°F) for approximately 45 minutes until set

  6. Cool for 10 minutes before slicing

  7. Cover tin with foil if the top starts to brown too quickly
