knead first 5 ingredients by hand until combined
work in 80g softened butter (divided). knead in stand mixer on low for 20 min
cover and let double in size (~8 hours)
Proof overnight in fridge
roll it out into a rectangle then roll vertically from bottom
Place in loaf pan & allow to double in size
egg wash on top & bake for 50 min at 375°
(internal temp 190º)
