On a medium heat, sauté the diced onion in oil till slightly softened.
Add lamb, crushed tomatoes, ginger garlic paste.
Cook covered for about 1 hour till lamb is tender.
Add spices and oil.
Cook till oil separates and the lamb is fully cooked, about 10 mins.
In a separate pan, on a high heat stir fry the chopped peppers and onion in a tbsp oil for 3 mins, stirring constantly. Do not overcook.
Add the stir fried veggies to the lamb curry, toss to combine.
Cover and simmer on low for 5 mins.
Garnish with coriander.
