Pakistani Lamb Jalfrezi Stir-fry
  1. On a medium heat, sauté the diced onion in oil till slightly softened.

  2. Add lamb, crushed tomatoes, ginger garlic paste.

  3. Cook covered for about 1 hour till lamb is tender.

  4. Add spices and oil.

  5. Cook till oil separates and the lamb is fully cooked, about 10 mins.

  6. In a separate pan, on a high heat stir fry the chopped peppers and onion in a tbsp oil for 3 mins, stirring constantly. Do not overcook.

  7. Add the stir fried veggies to the lamb curry, toss to combine.

  8. Cover and simmer on low for 5 mins.

  9. Garnish with coriander.

  10. Enjoy!
