Harissa & Lemon Chicken
  1. Heat oven to 200°C fan.

  2. Mix, carrots, pepper, onion, garlic, courgette spread on tray.

  3. Place chicken skin side up on top.(Slice just into the meat if using thigh bone in)

  4. Mix harissa, olive oil, honey, lemon juice.

  5. Roast for 40/45 mins until chicken is cooked through

  6. Serve with Greek yoghurt, more lemon and coriander.
