Crispy outside, pillowy inside. Boiled, frozen, and fried once — a freezer full of better-than-takeout fries.
Ingredients
Cut + Boil
Cut potatoes into ½ inch sticks. Rinse under cold water. Add Salt to boiling water stir then boil potatoes for 5-6 mins.
Cool + Dry
Move boiled fries to a bowl of cold water with the tap running until no longer hot. Drain well. Place drained fries to a towel lined pan and pat dry.
Freeze
Put the dried fries flat in a single layer on pans and freeze until solid (1–6 hrs), then bag.
Fry from frozen
Heat oil to 350°F. Fry straight from frozen (don’t thaw), in batches, 4–6 min until golden.
Remove from oil, drain then, season and toss with Hy's.
