For the marinade, mix all of the ingredients in a large, deep dish and add the chicken. Marinate for at least 4 hours.
Preheat the oven to 200°C/180°C fan/400°F/gas mark 6.
Thread the marinated chicken thighs onto wooden skewers and cook in the oven for 55-65 minutes.
Prepare pickled red cabbage by mixing vinegar, sugar, water, and cabbage. Refrigerate for a couple of hours.
Prepare chips by frying potatoes until golden and crispy.
Serve the cooked chicken kebab with chips, pickled red cabbage, salad, and warm pita.
