Rinse gently the rice in a bowl until the water is mostly clear. 3 cups of rice usually takes 4 to 5 times;
Place the rinsed rice in a medium pot and add the 3 cups of water;
Level the rice in the pot;
Place the pot over medium-high heat;
When the water starts boling switch to low heat;
Boil for 15 minutes.
At the 15 minutes mark turn off the heat and keep the lid on for 10 minutes;
After 10 minutes have passed transfer the rice in a properly sized bowl and cover with a damp cloth.
Prepare the seasoned vinegar by adding the sugar and salt to the vinegar and mixing thoroughly until fully dissolved. Mix in a small pan over low heat to hasten the solution process.
Sprinkle ⅓ cup of vinegar over the rice bit by bit, cutting gently through the rice and turning it over every once in a while to incorporate the vinegar as homogenuosly as possible. Keep the remaining vinegar for later in the sushi making process.
