Chop the cabbage into bite-sized pieces and wash well. Ensure the cabbage is fully dried.
Mince the garlic and set aside.
Toast the sesame seeds in a skillet over medium heat until brown.
Add the toasted sesame seeds to a mortar and use a pestle to grind the seeds to a mush.
Add the minced garlic and mix until well-combined.
Combine the cabbage to a container, add the salt, hondashi and shake well to distribute the seasoning.
Add the sesame-garlic paste to the cabbage, shake well to mix and serve with additional sesame seeds or your favorite toppings.
