Blackened Cod With Mango Salsa
  1. Preheat oven to 400F degrees.

  2. Wipe the flesh of the fish with a dry paper towel to remove any excess moisture.

  3. Mix all blackening rub ingredients in a small bowl to combine into a paste.

  4. Rub the blackening paste on one side of the fish.

  5. Pour a small amount of vegetable oil into a large saute pan and heat over medium-high heat.

  6. When the pan is hot, carefully place the fish into the preheated pan.

  7. Sear the fish on both sides for 2-3 minutes each side.

  8. Remove the fish from the pan and place onto a cookie sheet lined with tinfoil.

  9. Place the pan into the preheated oven and bake for 10-15 minutes or until cod is cooked through.

  10. Remove the pan from the oven and place the fish on top of steamed rice or whatever you’re serving.

  11. Top the fish with salsa, a lime wedge, and extra cilantro.
