Preheat oven to 350°F
Mix oats, pumpkin puree, plant milk, peanut butter, sugar, pumpkin pie spice, cinnamon, salt, and vanilla extract in a bowl.
Press the mixture firmly into the prepared baking dish.
Bake for 20 minutes or until edges are golden brown. Let cool.
Melt chocolate and coconut oil in 30 second intervals until melted. Spread it evenly over the cooled oatmeal bars.
Chill in the fridge for 15-20 minutes until the chocolate sets.
Slice into bars and enjoy!
