Combine beef, grated onion, garlic, and all spices. Mix very well until sticky and uniform.
Place on parchment, cover with another sheet, roll into a tight log, folding and pressing to remove all air pockets.
Chill for an hour if you don't have time it's fine to be in.
Bake at 400°F for about 30 minutes. Remove parchment, and if you want to crisp the meat increase heat to 425°F, and bake 5 min to brown.
Rest 10 min, then slice very thin.
Blend all sauce ingredients until smooth and creamy. Chill.
Spread peppers, jalapeños, and onions on a sheet pan. Drizzle with olive oil + salt. Roast at 425°F until charred and soft.
Toast pitas, spread sauce, add sliced doner meat, top with roasted veggies, finish with more sauce. Enjoy!
