Prepare the roasted red pepper and corn salad by combining the roasted corn, mini cucumber, diced cherry tomatoes, diced red onion, roasted red peppers, black beans, avocado, cilantro, rice vinegar, olive oil, Italian seasoning, and everything but the elote seasoning.
Prepare the cilantro lime rice by cooking the basmati rice according to package instructions, then stirring in 2 tbsp cilantro and the juice of 1 lime.
Assemble the dish by adding ¾ cup cilantro lime rice, the honey cilantro chicken breast, and 1 serving of the roasted red pepper salad to a bowl. Garnish with extra cilantro and brush the chicken with additional sauce if needed.
