Salt and pepper the chicken.
Place onions and carrots in a roasting pan, evenly covering the bottom.
Place chicken on top of the vegetables in a single layer.
Convection bake at 375F for 30 minutes (or up to 165 internal temp).
Meanwhile, put mustard, wine, and Italian seasoning in a small saucepan and heat on low.
When chicken is ready, remove from oven and slice the chicken into bite-sized pieces.
Place the chicken in the mustard sauce and toss until well coated.
Serve the chicken in a large bowl over onions and carrots.
