Combine all ingredients except the Panko breadcrumbs and olive oil. If the mixture is too wet, add extra breadcrumbs.
Roll tuna mixture into balls and flatten slightly so that they look like burger patties. Dust with Panko breadcrumbs and place in the fridge to chill for 30 minutes.
Heat oil in a frying pan and fry the tuna patties on each side for three minutes or until golden and crispy. Serve hot or cold.
