  1. Preheat your oven to 160 (fan)

  2. Mix together the butter and sugar until creamy

  3. Stir in the eggs until smooth and add the flour, fold in

  4. Cook until golden and springy (mine took about 25-30mins)

  5. Leave to cool for a bit then add the jam and coconut

  6. Serve with some custard if you like and enjoy
