Bacon, Egg And Cheese Bagels
  1. Pan fry the bacon until crispy, set aside.

  2. Whisk together eggs, cottage cheese, chives, salt & pepper. Finally stir in the crispy bacon.

  3. Pour the mixture into a lined baking dish and bake at 180°C for 15-20 mins until set.

  4. Cut the frittata into 4 equal squares. Layer into bagels then top with the cheese and sriracha mayo. Spray with some olive oil.

  5. Pop back into the oven for 3 mins until the cheese melts, then let cool before wrapping individually in baking paper.

  6. Store in the fridge for up to 4 days.
