Season beef heavily with salt and pepper on all sides
Sear until browned all over in a large pot
Add bone broth until covered. Bring to a light simmer on the stove then cover with lid
Braise beef at 350f for 2.5 hours
While beef is braising caramelized onions in butter until nicely browned and aromatic, this should take at least 2 hours
Remove cooked beef, save bone broth
Deglaze onion pan with cognac and wine, cook until 80% reduced
Strain bone broth into the onions, add thyme, pepper & bay
Season with ½Tbsp salt ¼tsp black pepper
Simmer semi covered for 2 hours
Remove aromatics, add shredded beef
Pour into oven safe bowl, top with bread and lots of cheese. Bake at high heat until melted and browning all over
