Cajun Shrimp And Sausage
  1. Place shrimp in a bowl and coat with one tablespoon of cajun seasoning.

  2. Place a large cast-iron skillet over medium-high heat and add the olive oil. Once hot, saute the shrimp in it for 3-4 minutes. Once nicely browned, remove and set aside on a plate.

  3. Add the sausage, brown it for 2-3 minutes, remove and set aside with the shrimp.

  4. Add the onion to the pan and cook for 2-3 minutes. Add the minced garlic, peppers, mushrooms, okra, and remaining cajun seasoning, sauté for 4-5 minutes, until the peppers are soft.

  5. Add the sausage back to the pan.

  6. Add the chicken broth, cream and cheese, stir to combine. Reduce the heat to medium-low and simmer until the sauce reduces in half. Stir from time to time. Taste and adjust for salt and pepper.

  7. Add the shrimp back to the pan, and bring the mixture to a light simmer.

  8. Serve over rice, sprinkled with parsley.
