Creamed Spinach
  1. Get out a skillet, placing it over medium heat with your butter in it.

  2. Sauté your onion for five minutes or until caramelized.

  3. Stir in the heavy cream, chicken stock, spinach, nutmeg, salt and pepper, sautéing for five minutes. Your spinach should wilt.

  4. Continue to cook your spinach until tender and the sauce thickens. It should take fifteen minutes.
